Christmas Fruit cake cookies with step wise pictorial and video method.

WHAT ARE FRUITCAKE COOKIES?

Embedded with candied fruits, tutti fruity, lots of dry fruits and fragrant by all spices, these soft & chew fruit cake cookies, also called Christmas Lizzies, are bursting with colours, flavor and mouth melting texture.

You can call it the sibling of traditional Christmas cake in terms of taste and ingredients.

WHAT FRUITS I CAN USE?

There’s no bar about the fruits you can choose to make Christmas Lizzies fruitcake cookies . This is purely dependent on the availability of fruits in your city.

Also you can add some candied peels in the cookies.

But do note that these cookies ask for only dried fruits and not the fresh one.

In addition to what we have used, there are some of the dried fruits you can add, like :

Prunes, Glazed cherries, Papaya, Apple, Pineapple, Plum etc.
Sultanas and Black Raisins – raisins are the dark dried grapes, whereas sultanas are the golden one.
Currants – red or black
Lemon and Orange peel – candied or plain
Dried Dates, Figs, Apricots, pecans, pistachios etc.

WHICH FRUIT JUICES SHOULD BE USED FOR COOKING/SOAKING FRUITS?

This is the Orange Juice which is most commonly used in soaking fruits, be it for Christmas fruit cake or fruit cake cookies.

The second most used juice is grape juice.

However some people love to use cranberry juice, apple juice or mix fruits juice too.

CAN THESE COOKIES BE MADE BY SOAKING FRUITS?

Yes, instead of cooking the fruits, as shown in this recipe, you can soak the fruits in juice.

Minimum from 1 hour to maximum 3 days, you can soak the chopped dried fruits in juice by keeping them in refrigerator.

But in such a case, you need to be careful about the amount of moisture in cookies. Because in the given method, have have completely dried the juice by cooking, but in case of soaking, whole fruit juice will not vanish.

So either you can squeeze the fruits to get rid of extra juice or slightly enhance the quantity of flour to adjust little extra juice sitting beneath.

CAN I SOAK NUTS TOO?

Absolutely yes and in the recipe of vegan Christmas fruit cake, we had soaked the nuts also alongwith dried fruits.

But this time we avoided soaking nuts for the reason that nuts loose their crunch on soaking.

We wanted that favourite bite in cookies and as such added raw nuts.

INGREDIENTS USED

DRIED FRUITS : This recipe uses kiwi, mango, strawberry, cranberry, raisins and blueberries, which are in the dried form.

You are free to use any dried fruits and not necessarily confine yourself to the mentioned only.

NUTS : We have added almonds cashews and walnuts. But in addition to them you can go for pistachios, dried Dates, Figs, Apricots, pecans etc.

FLOUR : wheat flour can easily be replaced with all purpose flour/maida without making any other changes in the recipe.

BUTTER : This recipe has vegan butter in it. But if you are vegetarian, feel free to add any butter you use for regular baking.

JUICE : Store bought orange juice is used in this recipe. However you can extract your own juice at home.

In place of orange juice, you can comfortably go for cranberry, apple or mix fruits juice, as earlier mentioned.

SWEETENER : For the purpose of sweetener, you have added 2 types of sugar in equal proportion.

One is Jaggery Sugar, popularly called as Jaggery powder and second is Bura Sugar.

These both are the healthy alternatives to regular refined sugar but don’t complex yourself with these 2 ingredients.

Feel free to add brown sugar or cane sugar in place of jaggery powder and refined powdered sugar replacing bura sugar.

Also note that it is not necessary to add 2 types of sugars. In case you have only one type of sugar, go for that one only.

ALL SPICES : It includes Cloves, Cinnamon and Nutmeg. These spices bring aromatic and pungent flavors to the cookies. If have have already made all spices, then add 1 tsp of that instead of these three ingredients separately.

VANILLA ESSENCE : It also works as an aromatic agent in the recipe. In place of Vanilla Essence, you can add Mix fruit essence too.

SALT : Don’t thick salt in sweet recipe is uncalled for. A pinch of salt helps in enhancing the flavours of the recipe. But in case your butter has salt, slip adding additional salt.

HOW TO STORE COOKIES?

These cookies can be stored in airtight container and remains good for about a month.

  1. Take a non stick pan and add thinly chopped dried fruits and orange juice in it.

  6. Start whisking it with the electric beater until butter turns soft, creamy and fluffy.

  7. Add Jaggery powder and Bura sugar.

  9. Again whisk the butter sugar mixture with electric beater and soon the mixture will turn into a creamy one.

  10. Add flour, cloves powder, cinnamon powder, nutmeg powder and salt. Mix.

  11. By now dried fruits must have turned completely cool. Add them to the bowl.

  12. Also add roughly chopped dry fruits and vanilla essence.

  14. Now using your hand start bringing the mixture together in the form of a dough. Remember, don’t knead it but only bring it together.

  17. Wrap this log into a cling film and likewise prepare the log and wrap the other portion of dough too.

  18. Place the logs in refrigerator for 4 to 5 hours or until they are rock solid.

  22. Bake in preheated oven @180°C/356°F in the middle rack of the oven with both the rods on for 18 to 20 minutes or until sides of the cookies begin to turn slightly brown.

Ingredients

1 cup = 200 ml

  • 2.25 Cups 338 grams Whole wheat flour (i.e. 2 cups + 1/4 cup)
  • 1/2 Cup /90 grams dried fruits (we have cranberry, strawberry, kiwi, mango, raisins & blueberry)
  • 1/2 Cup /65 grams nuts (we used almonds, cashews & walnuts)
  • 1 cup Vegan butter (200 grams)
  • 1/2 cup orange juice (100 ml)
  • 1/2 Cup /75 grams Jaggery powder or brown sugar
  • 1/2 Cup /75 grams bura sugar or powdered sugar
  • 1/4 tsp cloves powder
  • 1/4 tsp cinnamon powder
  • 1/8 tsp nutmeg powder
  • 1/8 tsp salt
  • 1 tsp vanilla essence

Instructions

  • Take a non stick pan and add thinly chopped dried fruits and orange juice in it.

  • Simmer on low heat while keep them stirring to prevent burning.

  • Cook until orange juice is completely dry and you are left with a lump of juice soaked fruits.

  • Keep them aside to cool completely.

  • Take a bowl and add butter in it.

  • Start whisking it with the electric beater until butter turns soft, creamy and fluffy.

  • Add Jaggery powder and Bura sugar.

  • Give it a slight mix using spatula to prevent sugar from flying out of the bowl while beating.
