| After School Snacks, No-bake Sweets
This healthy raw chocolate slice recipe is SO rich, delicious and such a simple nourishing, thing to make. They make a wonderful, easy after school snack or weekend sweet treat for those that can tolerate nuts (or a late night chocolate fix)!
Health benefits
The almonds provide mood and energy elevating proteins, minerals and fats. The coconut and oil are amazing for the brain, immune and metabolic health. This is a whole food treat that is very satisfying and tastes amazing!
Take a look at the variations (below the main recipe) for suggestions to alter the recipe to suit your specific dietary requirements.
Healthy Chocolate, Almond and Coconut bars
Prep 15 minutes minutes
Total 1 hour hour 15 minutes minutes
Serves: 12 bars
One of my all time favourite chocolate-y treats theseHealthy Chocolate, Almond and Coconut bars are easy to make, nutritious and delicious.
Ingredients
- 300 g almond meal (2½ firmly packed cups)
- 80 g desiccated coconut (1 cup approx.) or shredded
- 130 g nut butter (½ cup) I like the ABC nut spread
- 4 tbsp rice malt syrup, honey or maple syrup -adjust the amount to make these more, or less sweet to suit your taste
- 100 g coconut oil (½ cup)
- 1 tbsp vanilla
- 1 tbsp coconut flour
- 100 g dark chocolate -melted
Method
Mix all ingredients (except the chocolate) together in a food processor/mixer until well combined and forming a rough paste.
If you have a Thermomix - mix 30 seconds, speed 4.
Pour into a slice tin lined with baking paper.
Refrigerate until set (about an hour).
Once set, melt the chocolate in a bowl placed over a pot of simmering water, stirring continually. Spread evenly with a spatula over the almond mix and refrigerate again until the chocolate is just set (10 minutes). You an also melt chocolate in the thermomix (see basic cookbook for directions).
Remove from the tin and slice into small bars.
Remember to keep these in the fridge or freezer. As with any raw coconut oil based product, they'll melt if not kept cold!
Store
Store in an airtight container in the fridge.
Tip
To get a good cut on the slice without cracking the chocolate, take out of the fridge or freezer for about 30 mins (approx) before slicing and you can also use a hot knife.
Variations
Low-fructose and dairy-free or vegan
Choose rice malt syrup for your sweetener for low fructose. Even though the 85% chocolate is very low in fructose, you may like to make some dairy-free raw chocolate for the top. Here is the recipe.
Nutella like
Swap the almonds for ground hazelnuts and use hazelnut butter for a match made in heaven.

I made some almond meal with a stick blender, but otherwise managed without a food processor for this recipe which is good to know for those without 🙂 I just stirred ingredients together with a wooden spoon and some muscle.

Hey G where do I get nut butter from?
RosanneReply
Georgia Harding says
Hi Rosie, good question. You can get it from the health isle of the supermarket or health food shops. I like ABC spread (Almond, brazil, cashew) but you can use any single or combination nut (peanut can be a bit overpowering unless you really love the flavour). These are amazing, you’ll love them G x

Hi G, can I use normal butter if I don’t have nut butter? Or would that eliminate the health benefits?? Thanks heaps , Annie

Hi there. Can you tell me the calorie value per serve ease, also where do I get vanilla powder? I’ve looked everywhere but cant find it. Thanks
Reply
Georgia Harding says
Hi Dawn, I’m sorry, I don’t know the calorie value. Remember that all calories are not created equal and as such, calorie counting is fraught with danger. For example an avocado has many more calories than a chocolate bar, but we both know which is going to serve your body better. I’m sure the fat content of these would make them very high in calories though, although a tiny square is more than satisfying.
The vanilla powder is often available in health food shops – Loving Earth make it. I buy mine online (cheaper this way) in bulk with my nuts/flour and legumes from Santos in Byron Bay. Their link is on the resources guide > NSW > Delivery. G xReply

Thanks Georgia. I’ll give them a go. They look extremely yummy and I have all the ingredients except the vanilla powder.

Just made these this morning. I have been craving a sweet treat and these hit the spot. Perfect with an afternoon cup of tea. (And thankfully i had all the ingredients). I used natural peanut butter as it was all I had and they are delicious. I made the chocolate along similar lines to the recipe you linked to – some to top the bars and some set in heart shapes in the fridge. Eating well really needn’t be boring hey? Thanks for the recipe. I am new to your site but I am sure I will be back again! Grace and Peace, Sharolyn

for an almond/tree nut allergic kid what would be the best substitute for the almond meal?

Try a mix of sunflower seeds, pumpkin seeds and a little linseed all ground into a meal, G x

Ok so have most ingredients, but umm silly question I’ve looked everywhere for vanilla powder (haven’t made it to Flannery’s yet) can I use custard powder as a substitute or is that not right?
Reply
Georgia Harding says
No not a silly question at all Renee. It is generally in health shops, but you can sub with vanilla bean paste or even essence. Even leave it out though I love the depth of flavour of vanilla. Enjoy G x

Could you add protein powder instead of the coconut flour, just to up the protein content of these? Thanks

Hi there
I’m new to your site and love the look of allllll the recipes. Just wondering from a nutritionists point of view, would you give this to an almost 2 year old?
Thanks

Georgia Harding says
I always recommend to go easy with developing the ‘sweet’ palate with young kids, it can really develop fussy eating habits (this post explains https://wellnourished.com.au/why-kids-want-processed-food/ ). But they are a nice low GI treat so as long as she/he is okay with nuts etc; a small square wouldn’t hurt G x

Hi Georgia,
I have never come across vanilla powder? I did an online search at Coles and it came up with protein powders. Is vanilla essence ok to use do you think? They looks so tasty! Looking forward to making them.
Thanks for the lovely recipes!!

These are SOOO good! 🙂 I use rice syrup for the low-fructose version and they are sweet enough for us with half the amount. So delicious, a perfect snack. I suffer from adrenal fatigue and need good high-protein/fat low-carb snacks to keep my blood sugar levels stable, and these are absolutely perfect! I make half a batch to last my husband and I a week or so and they are very much appreciated. 🙂Reply

Hi Georgia
Sounds like a great recipe!
Is there anything you would reccommend when substituting coconut oil?Thank you
Reply
Georgia Harding says
It would have to be a fat that solidifies when chilled – butter is another option G x

I don’t have a Thermomix. What can I do ? Also is it correct that this recipe does not require any baking / cooking? Thank you
Reply
Georgia Harding says
The TMX instructions are just secondary to the method for those that have one. As the recipe says, you just need to mix it well by hand or any mixer/ food processor. No cooking, it’s a raw treat that sets upon chilling. Enjoy

This was my first ever attempt using a Nourish recipe and oh my gosh I’m hooked!
I quickly whipped this up for a family gathering and my parents BEGGED me to let them keep what was left over of the slice.

Hi Corinne, so happy to hear you loved the recipe. A good tip is to get the slice out of the fridge or freezer for about 30 mins before slicing and also use a hot knife.
